There was no accessible soap at one of the hand sinks in the fourth auxiliary kitchen. The sink has a soap dispenser but the batteries for dispensing need replacement. Each handwashing sink shall be provided with a supply of hand cleaning liquid, powder or bar soap, individual, disposable towels, a continuous towel system that supplies the user with a clean towel or a heated-air hand drying device. Ice scoops in two of the four auxiliary kitchens were being stored incorrectly in stagnant room temperature water while pausing in use. During pauses in food preparation or dispensing, food preparation and dispensing utensils may be stored in running water of sufficient velocity to flush particulates to the drain, if used with moist food such as ice cream or mashed potatoes, or may be stored in a container of water if the water is maintained at a temperature of at least 135F and the container is cleaned frequently. General Remarks
|
General Remarks: - Detail clean soda and juice machines in auxiliary kitchens to remove grime. - Ice machines on soda machines in auxiliary kitchens need to be cleaned per manufacturer guidelines. - Food products that were observed to be above 41F at time of inspection were reported to only be out of refrigeration during service for 1 hour at a time before returning to refrigeration. Kitchen staff was reminded of importance of returning to refrigeration as soon as possible, use a four hr public health time control, or place food products in an ice bath during service to maintain sufficient temperature.
